Carbless Lasagna Roll Ups

 

As an Italian, Carbs were always part of the meals I was brought up on. Pasta is a huge part of our culture and usually is incorporated into each dinner in some way, shape or form. However, as we grow older, sometimes carbs are not the healthiest option to have with every dinner for a variety of reasons. Pasta is very high in carbs which can be unhealthy when consumed in large quantities. It also contains a protein called gluten which can cause gastric issues for those who are sensitive to this protein.

Whether you are trying to lose weight, decrease your sugar intake, or are gluten free, pasta may not be the best option for you. BUT there are ways to create dishes that have the Italian flare, are delicious AND are low in carbs. Here is one of my favorite dishes that is low carb but still an amazing dish that has not disappointed anytime I have made it. It is also very easy to make and absolutely a crowd pleaser.

Ingredients (can alter for smaller portion):
• 3 large zucchini
• 1 (16 oz) container ricotta
• ¾ cup freshly grated parmesan
• 2 large eggs
• ½ tsp garlic powder
• Kosher salt and pepper (to taste)
• 1 cup marinara
• 1 cup shredded mozzarella

Directions:
1. Preheat oven to 400 degrees. Slice zucchini lengthwise into 1/8 inch strips and place strips on paper towel-lined baking sheet to drain.
2. Make ricotta mixture: In small bowl combine ricotta, ½ cup parmesan, eggs and garlic powder. Season with salt and pepper to taste.
3. Spread a thin layer of marinara onto the bottom of a 9x13 inch baking dish. On each slice of zucchini, spoon a thin layer of sauce, spread ricotta mixture on top and sprinkle with mozzarella. Roll up and place in baking dish packed together tightly.
4. Sprinkle with remaining ¼ cup of parmesan. Add shredded mozzarella on top if you would like it to be more cheesy. Bake until zucchini is tender and cheese is melty (about 20 minutes).
